our Umwelt is a network of people. they carry out their daily battles to producing extraordinary, spontaneous, organic and biodynamic raw materials of forgotten ancient varieties

We brew fermented beverages that represent the footprints of the exploration of our surroundings.

we don't add any sour pitch nor bacteria / brett / wild yeasts to acidify our beers. they are naturally acidified thanks to spontaneous microfloras. we don't add any preservative nor additive.

we source our organic/biodynamic raw materials from local suppliers. we collaborate with them to saving and preserving native ancient varieties of fruits and grains.
