stile: fermentazione spontanea da coolship
 
Spontanea Blend 2021 è il frutto della collaborazione con Stefano Amerighi, vignaiolo biodinamico di Cortona: tutti gli anni, da settembre 2018, piazziamo una coolship con il mosto di birra ancora caldo, durante i giorni più intensi della vendemmia, proprio davanti all'ingresso della cantina di Stefano Amerighi.
Dalla coolship riempiamo alcune barrique di rovere francese che hanno ospitato i vini di Stefano e le mettiamo a dimora nella sua vecchia cantina. Non si tratta quindi di una grape ale, perché non vi è alcun apporto di uva o derivati. C'è però una condivisione amichevole di microflora.
 
Ad agosto 2021 abbiamo scelto le migliori botti delle 3 annate disponibili, 2018, 2019 e 2020, e abbiamo creato quello che secondo noi era il blend più interessante. Cercavamo un gusto fresco, affilato, agrumato ed erbaceo, in cui il brett giocasse un ruolo importante, ma senza sovrastare le altre componenti.
 
Spontanea Blend 2021 is the result of the collaboration with Stefano Amerighi, biodynamic winemaker in Cortona: since 2018, every year we place our coolship with the beer wort, during the most intense days of the harvest, right in front of the entrance to Stefano Amerighi's cellar. From the coolship we fill some French oak barriques that hosted Stefano's wines and we stock them in Stefano's old cellar.
It is therefore not a grape ale because there is no contribution of grapes or derivatives. There is, however, a friendly sharing of microflora.
In August 2021 we chose the best barrels of the 3 available vintages, 2018, 2019 and 2020, and we created what we thought was the most interesting blend. We were looking for a fresh, sharp, citrusy and herbaceous taste, in which the brett played an important role, but without overpowering the other components.
